time zone zhanged automatically

I installed using the lamp.sh script with some tags.. Everything worked out fine but I am suspicious of the amount of things that got installed and the timezone too got changed automatically.. How do I know what stuffs got downloaded and purge them??
git clone "https://github.com/teddysun/lamp.git"
cd lamp

• install the lamp stack
  sudo ./lamp.sh --apache_option 1 --db_option 8 --php_option 6 --kodexplorer_option 2 --apache_modules mod_wsgi,mod_security --php_extensions apcu,xdebug --db_manage_modules phpmyadmin
