TSA-346: Restore saving title and preset before ingest

Problem

The previous fix was partially lost during a later refactor of handleProcessDocument.

Solution

• handleProcessDocument accepts form values again and sends title and presetId via POST /documents/{id}/upload-url before ingest.
• Ingest starts only after the metadata update succeeds.

How to test

1. Upload a PDF with title "1st name".
2. After 100%, change the title to "2nd name" and pick another preset.
3. Click "Start Processing" → upload-url is sent with the new values before ingest.
4. GET /api/v1/documents/{id} returns title: "2nd name" and the new preset.

Note

If ingest fails, the form is remounted and the title field resets to the file name, so a retry would send the old title. This comes from the #282 flow and is out of scope here.
