For PNG, -strip removes iCCP, sRGB, gAMA, cHRM and cICP along with the other ancillary chunks; for JPEG it drops the ICC profile (APP2) with the other markers. These change how the image is displayed (wide-gamut images such as Display P3 or Adobe RGB shift in color), so they are more than metadata and worth stating in the help text.
