Add jina-embeddings-v4 support

Weaviate API supports Jina Embeddings V4 as of v1.31, see:

weaviate/weaviate#8587
weaviate/weaviate#8609

This PR adds it to this python SDK. It succeeds clip-v2 also as it's a multimodal model. See:
